Living in Amherst: One Woman's Guide
Stop by often for updates on fun (hopefully inexpensive!) activities in the Amherst area. In addition to offering ideas for thigns to do, I will review events that I have attended myself. It seemslike there has been a lot of sadness recently, both in the news and in my own life. My husband's grandmother is not doing well (she is 84 years old) and is in and out of it. At church on Sunday, we found out about a friend who passed away last week (this was a rather public event and was in the news). It seems that everywhere I turn, I am hearing sad news. However, what is both good and frustrating is that life must go on. I try to sit quietly and think, but then hear my kids calling and asking for a drink. Or, the phone will ring and I will be pulled back into reality for a while. The best way to overcome sadness and mourning is to get back into a normal routine. For me, a normal routine often involves cooking.
I made my first quiche the other day. I am not sure why I have never made one before, especially after I realized how easy it is. I used a boxed mix for the crust - all I needed to do was add water. I lined the bottom of the pan with the the crust. Then, I covered the crust with fresh, chopped broccoli and shredded cheese. On top of that, I poured well mixed eggs, salt, pepper, half and half and flour. (I used about 9 eggs, 2 cups of half and half and three tablespoons of flour. I have a ten inch pan.) I baked the quiche for about 55 minutes in a 375 degree oven. It was absolutely fantastic - even the kids ate it!
